Seared Scallops: yukon potato and celery root puree, american caviar and crispy leeks

Beef Tartare: grass-fed jackson hole beef, quail egg, norwegian rye cracker and truffle-thyme vinaigrette

Wood Oven Stuffed Quail: black truffle and fig stuffed quail, charred endive, duck fat potatoes and roasted fig glaze

Lobster Bisque: champagne creme fraiche and butter poached lobster

Sautéed Hawaiian Opah: 5oz pan seared opah, braised endive, sea island red peas and cranberry-kumquat relish

Braised Elk Osso Bucco: parmesan polenta, garlic and herb marrow crust, confit tomatoes and natural jus

Seared Pheasant Breast: parsnip puree, leek, chestnut and foie gras stuffing and cherry gastrique

Wagyu New York Steak: porcini encrusted block cut steak, crispy wild mushroom risotto cake, swiss chard and red wine demi-glace, add sautéed king crab $15

Risotto: roasted wild mushrooms, parmigiano reggiano and crispy leeks, add shaved black truffles $15

Trio is able to accommodate groups up to 75 people. Any group larger than 25 usually requires a separate site fee to reserve the entire restaurant. We can customize a menu to fit your group’s needs. If you are interested in having an event at Trio, please give us a call for more information.

our story

Voted one of Jackson Hole’s hottest restaurants in 2008 by Food and Wine Magazine, Trio is located just off the Town Square. Open since 2005, Trio is owned and operated by two local chefs with a flare for innovation. Trio serves both seasonal and nightly specials in a relaxed atmosphere, popular with locals and tourists alike. Come in and enjoy a specialty cocktail in front of the wood-fired oven as the chefs perform in an open kitchen.

Will Bradof, Chef/Owner

Upon graduating from Colgate University, Will established his connection to Jackson while cooking in a number of local establishments. Deciding he wanted to take his skills to the next level, Will enrolled at the Culinary Institute of America. After graduation, with apprenticeships in Tuscany, Italy, and at Tra Vigne restaurant in Napa, CA, Will returned to Jackson for a position at the Snake River Grill. Will quickly became one of the Snake River Grill’s integral chefs, spending a year and a half developing his unique style and technique, before opening Trio.


Paul Wireman, Chef/Owner

Following the completion of a degree in Business Management and Nutrition at Harding University in Searcy, Arkansas, Paul held a number of cooking jobs throughout the northern Midwest before settling in at the Palomino Restaurant in Minneapolis. After working at the Palomino as a lead cook, Paul moved to the Jackson area in the summer of 2003. Paul joined the Snake River Grill and was soon an essential member of the kitchen staff. In the summer of 2005 he left to open Trio.
